From our bustling main dining room to our 2,500 sq ft Lucha Lounge Rooftop, we deliver a high-energy, unforgettable experience.

Big things are on the horizon! We are preparing to scale the brand and open two brand-new locations. We are seeking a dynamic, hands-on Restaurant Manager who wants to master every facet of our operation today so they can step up as the opening General Manager (GM) for our next location tomorrow.

The Role:

This isn't a traditional sit-in-the-office management job. We need a hybrid leader who is equally comfortable masterfully managing the energy of the Front of House (FOH) and jumping into the Back of House (BOH) to ensure food quality and line efficiency during peak rushes. You will spend your initial tenure learning our culture, systems, menu, and operations inside and out, with a direct promotional track to spearhead our upcoming expansion as an Opening General Manager.

Key Responsibilities:

Cross-Functional Operations (FOH & BOH)

  • Front of House: Lead, coach, and motivate the service and bar teams to deliver high-energy, exceptional guest experiences. Manage floor flow, host stands, and guest relationsespecially during high-volume rooftop and patio shifts.

  • Back of House: Work closely with the kitchen team to maintain strict food safety, cleanliness, and prep standards. Step onto the line when necessary to support ticket times, portion control, and plate presentation.

  • Inventory & Cost Control: Assist in managing food, beverage, and labor costs. Conduct inventory audits and manage ordering to optimize profitability without sacrificing quality.

Team Leadership & Culture

  • Recruit, hire, onboard, and train a high-performing team that embodies The Flying Mexicans energetic culture.

  • Foster a collaborative environment where BOH and FOH operate as one cohesive unit.

Future Growth & Expansion (GM Track)

  • Actively absorb our operational blueprints, vendor structures, and brand standards.

  • Participate in strategic planning for the upcoming new locations.

  • Prepare to transition into the Opening General Manager role for Location #2, which includes building out a new team, organizing NRO (New Restaurant Opening) timelines, and establishing our brand in a new market.

Qualifications & Experience:
  • Dual-Threat Experience: Minimum of 23 years of restaurant management experience with proven, hands-on competency in both FOH leadership and BOH/kitchen operations.

  • High-Volume Background: Experience working in a high-volume restaurant, bar, or rooftop/patio setting is highly preferred.

  • Growth Mindset: Strong desire to step into a General Manager role. You must be adaptable, resilient, and excited by the fast-paced nature of a new restaurant opening.

  • Leadership Style: A "lead-by-example" management style. You aren't afraid to roll up your sleeves, wash dishes, bus tables, or jump on the line if that's what the team needs to win.

  • Financial Literacy: Basic understanding of restaurant P&L components, labor matrixes, and food/beverage cost controls.

  • Certifications: ServSafe Manager and local alcohol manager certification (ABRA) required (or must be willing to obtain quickly).

Compensation Details

Compensation: Salary ($80,000.00 - $85,000.00)
