Food & Beverage Director

We are seeking an experienced and driven Food and Beverage Director to lead and oversee all operations across our casinos bar, cafe, and deli. This individual will be responsible for managing daily food and beverage activities, ensuring exceptional guest experiences, optimizing financial performance, and maintaining strict compliance with health and gaming regulations. The ideal candidate will have strong leadership capabilities, a data-driven mindset, and working knowledge of relevant software systems.

• Oversee and manage the operations of the casinos bar, cafe, and deli, ensuring high standards of service, quality, and compliance.
  
• Supervise and lead F&B staff, including hiring, training, scheduling, performance management, and staff development.
  
• Analyze sales, cost, and labor data using Microsoft Excel, Agilysys POS, and internal reports to drive operational efficiency and profitability.
  
• Develop and implement strategies to increase revenue, improve guest satisfaction, and control costs.
  
• Ensure compliance with Nevada Gaming Control Board regulations, local health codes, and internal policies.
  
• Coordinate with vendors, suppliers, and internal departments for inventory, purchasing, and event planning.
  
• Maintain accurate documentation using Microsoft Word and other tools for SOPs, policies, reports, and communications.
  
• Lead health and safety initiatives and conduct regular inspections to ensure cleanliness and compliance.
  
• Create and maintain a positive work environment that promotes teamwork, communication, and continuous improvement.
  

• Minimum 5 years of management experience in food and beverage operations, preferably in a casino, hotel, or high-volume venue.
  
• Strong working knowledge of Microsoft Word, Excel, and Agilysys (POS/Inventory Systems).
  
• Demonstrated experience with data analysis and operational planning.
  
• Proven leadership and team management skills.
  
• Excellent communication, organizational, and customer service skills.
  
• Ability to work flexible hours, including nights, weekends, and holidays as needed.
  
• Must possess and maintain a valid Nevada Gaming Registration.
  
• Must possess and maintain valid Nevada Food Handler and Alcohol Awareness Cards.
  

• Experience in a casino or hospitality environment with multiple F&B outlets.
  
• Familiarity with labor cost control and budget management.
  
• Knowledge of food safety and sanitation standards (e.g., ServSafe Certification)

Essential Job Functions:

• Manage food and beverage staff.

• Create purchase orders for necessary supplies.
• Makes suggestions and changes to expedite service, increase overall check averages, and decrease cost where applicable.
• Oversee compliance with all Clark County Health Department regulations.
• Develop policies and procedures as needed.
• Counsel and discipline employees as required.
• Train and develop staff as needed.
• Maintain appearance standards as outlined in the Club Fortune Casino Employee Handbook.
• Provide courteous service and be cordial to all internal and external guests.
• Perform other duties as assigned.

Work Environment and ADA Requirements:

Must be able to stand for entire shift. Must be able to work in an environment with loud background noise. Must be able to lift, push, pull and carry. Must be able to lift and carry a minimum of 50 pounds on a regular basis. Must be able to stoop, bend, reach, twist, crouch, squat, lift. Must be able to listen and respond to visual and aural cues. Must be able to simultaneously handle the demands of many customers. When on duty, must be able to tolerate areas containing second hand smoke, high noise levels, bright lights and dust.
