Job Summary:
The Assistant Dining Room Manager help with all the restaurant facilities, responding to guest concerns, and building employee relationships. In addition, this position supports the Dining Room Manager with advanced administrative responsibilities including using Kronos, accurately logging invoices, tracking uniform usage and overseeing all food outlet supplies.

Responsibilities
- Fully understand and support Xanterra Mission Statement Core Values and F&B Mission Statement
- Focus on continually providing exceptional quality of service to guests, while maximizing profitability, both in how work is conducted and when interacting with guests.
- Ensure adherence for self, and all assigned staff, to all prescribed Company, statutory/regulatory policies, and procedures such as Guest service, Cash handling, Hygiene, Food Sanitation and Environment, Health & Safety (EHS) etc.
- Responsible for assisting in overseeing the daily operation of all dining outlets to maximize profitability, minimize legal liability and conform to the regulations of Coconino Health Department and Arizona Liquor Laws.
- Responsible for compliance with all health and safety regulations and enforcing sanitary practices for food handling, general cleanliness, and maintenance of dining and food service areas. Responsible for reporting all maintenance repair requests in a timely manner. Is this kind of repeating the one above that says conform to the regulations of Coco Health.?
- Support F&B training requirements by scheduling and assist in conducting assigned classes for staff and assist in facilitating departmental trainings. Assist with tracking of front of house (FOH) staff for all required training including, TIPS and Arizona Liquor Law.
- Works with (BOH) Manager/Staff for the efficient buffet set-up, maintenance and breakdown in accordance with hours of operation. Following staffing guides for FOH and sets up sections for the meal period.
- Ensure all guest concerns (food quality or service) and employee's concerns/issues are investigated, addressed and resolved in a professional manner & communication is made to the Dining Room/Kitchen and Operations Managers where appropriate.
- While on shift conduct continual quality inspections/ walk-throughs/table touches, of the work area and work closely with BOH Managers to ensure food quality, consistency, presentation, cleanliness and safety is maintained. Participate in quarterly F&B audits to determine areas and/or processes which may have opportunities for improvement.
- Ensure Cash Handling procedures are enforced for all staff including, check outs, voids, comps, spec sheets special event billing, tours, etc.
- Ensure staff are assigned, and have completed, all assigned tasks including job duties, section responsibilities and side or project work.
- Responsible for reviewing and daily approval of all FOH employees through Kronos in the absence of a dining room manager or as needed operationally.
- Performs advanced administrative functions as assigned by the Dining Room or Operations Manager which may include, scheduling, timekeeping, placing orders, performing end of month inventories, responding to guest feedback, FOH general invoices, coding; and tracking for non-foods and beverage, etc.
- Works with restaurant to place liquor, wine & beer orders in a timely manner.
- Participates in End of Month Inventory.
- Covers shifts, as necessary in the absence of Restaurant Supervisor or other F&B positions.
- Other duties as assigned.
Qualifications
- Previous one year food service management or supervisory experience with a thorough knowledge of food and beverage industry.
- Must have a excellent working knowledge of Microsoft Office software programs (Word and Excel, Outlook); POS system experience a plus
Physical Requirements include:
Constant: Standing, walking, lifting and carrying 10 lbs or less.
Frequent: Handling, reaching outward, carrying 11-20 lbs, and pushing/pulling 12 lbs or less.
Occasional: Sitting, reaching above shoulder, bending, kneeling/squatting, carrying 21-50 lbs., and pushing/pulling 13-100 lbs.
