Basic computer skills (word processing, spreadsheets, internet research) Our restaurant has compiled recipes for specials, inventory controls, and menu plate costing and want to keep these moving forward. Be able to negotiate the correct pricing with major food companies but still buy as much local sustainable fruit and produce from the area farmers at the correct price. Job duties: Understand this position is hands on. We expect our kitchen manager to be on the line cooking at least 30 hours in the summer (over 400 covers on weekends) and do at least a full line shift each week in the winter. Be able to lead, supervise and teach kitchen staff to serve food that is tasty, has good presentation and has the correct food cost. Supervise and coordinate all back-of-the-house operations and personnel, including food preparation, kitchen and storeroom areas to achieve maximum operational efficiency and food quality. Control waste and food cost, and perform monthly inventory valuation to determine actual food cost. Schedule all kitchen personnel, including self to meet the needs and percentages for kitchen.
