Tony Starlight?s Supperclub & Lounge seeks experienced kitchen manager Our Concept: We are a show club that features high quality food and drink, NOT a fine dining restaurant with live music. It is extremely important that this is clear. We have been successful by being exactly what we are and not trying to be all things to all people. We are family owned and there is a small staff. Harmony is essential to our success. Menu: We have some established menu items but will be seeking to update the menu to suit your skills. We also make seasonal updates. The menu should skew toward a mature audience, serving classic supper club fare, high quality but simple. I cannot stress the simplicity issue enough. Fresh ingredients, sauces from scratch, etc. Consistency is paramount. Fare should look and taste the same on each visit. Each item served correctly or not at all. Our menu must be prepared quickly, accurately and consistently. You: You are passionate about cooking and are proud to have high standards. Your appearance must be consistent with the aesthetic of our club. No visible tattoos, facial piercings or hair colors that do not occur in nature. Responsibilities include menu design, cooking, expediting, hiring/firing kitchen staff, ordering and maintaining relationships with vendors, maintaining profitable food cost, inventories. Cleanliness, organization and strong leadership and oversight skills are an absolute must. There is intense pressure at times. Weekend and certain special event weeknights we can put 100 dinners out in an hour with only three people on the line. We have very talented sous chefs and prep cooks who need only effective leadership to excel. You must be that leader. The Job: Starts immediately. You must be able to start no later than March 15. $550 per week to start. One week paid vacation and modest bonus structure based upon sales. Tuesday ?
