University of North Texas Food Service Manager II (Culinary Operation Chef) Department Overview The mission of the Dining Services department is to provide high quality nutritious meals, excellent value, and superior service, by our friendly, customer-oriented staff. Job Description The Food Service Manger II is a specialized culinary arts position within the Department of Dining Services. Work involves menu development, testing and standardization of recipes, training cooks in menu concepts and any execution therein. This is a working chef position, which involves the planning of menus, as well as preparation and quality control of food in a large scale cafeteria setting in which all aspects of food production will be required. The position will be responsible for the following duties: * Meets with production managers and cooks in planning highly acceptable menus/recipes for residential dining cafeterias which are in line with Dining Services cost goals. * Trains and works alongside cooks in all aspects of production, presentation, and service of menus. * Create high quality/low cost entrees, sides, and desserts with attractive presentation for a cafeteria setting. * Studies cooking and kitchen production in residential operations; notes areas in need of correction and/or improvement, and makes suggestions for improving operating efficiency. * Prepares and cooks food in Dining Services as needed. * Is observant of industry, health department, and Dining Services standards for preparing and serving safe food. * Creatively exercises quality and cost control techniques in menu planning and presentation, and addresses any applicable training needed. Minimum Qualifications Bachelors degree in related field and three years of experience in food service management; or any equivalent combination of experience, education or training which provides the following knowledge, abilities, and skills: * Thorough knowledge of food preparation and food service management in a large food service unit. * Thorough knowledge of hazards to human life and health that can occur from improper food preservation and service. * Thorough knowledge of kitchen equipment, kitchen implements, and advanced food preparation and processing procedures. * Ability to analyze and solve problems, and make the necessary decisions on personnel, food preparation, or food handling problems that may develop. * Skill in determining and requisitioning supplies of food and vegetables. * Ability to develop and maintain accurate records of food inventories, personnel, labor, and food costs. * Skill in training, supervising, and evaluating the work of subordinates * Ability to maintain time and cash receipts records. * Ability to establish and maintain effective working relationships * Knowledge of safety and security precautions appropriate to work performed. * Must have a valid Texas driver's license or the ability to obtain within 30 days of employment.
