Position Summary: The Dining Room Manager (DRM) works closely with the Executive Chef (EC) and the Director of Operations (DO) to execute the food service requirements found in the operation of a Full American Plan Resort.  The DRM will create, train, and execute food service operations with a team comprised of young, seasonal employees with various backgrounds and experience levels, promoting cohesion and support amongst the group.  The DRM will operate in continuous close contact with a diverse high-end clientele with a high level of expectations.   Principal Responsibilities: Responsible for gracious guest services and interaction from guest arrival to departure, attending to guests inquires, comments, or concerns while representing Migis Lodge and The Migis Hotel Group (MHG) in a professional manner and appearance Work closely with the Director of Human Resources and DO in the interview and hiring process to ensure the best possible team Responsible for ensuring that seasonal Dining Room employees understand and fulfill their commitments regarding their employment start and end dates Responsible for training front of the house staff (hosts, servers, bussers, runners, roll and relish etc.) to meet or exceed service standards set by ownership and the GM Lead staff by being an active participant on the floor.  Be a source of instruction and guidance, offer relevant information, and motivate through example. Work with the EC to facilitate constructive communication between team members, both front and back of the house, to continuously direct, evaluate, and improve food and beverage services Ensure consistent communication with the front desk to maintain and develop accurate records regarding guest special requests and needs Maintain a well-organized collection of all seating charts, staff schedules, and other relevant materials to promote guest service and operational efficiency Maintain a two-week schedule staffed to forecasted business and labor targets.  Effectively lead our staff towards greater consistency to increase productivity while maintaining optimum service to guest. Ensure that staff standards are met for behavior, uniform, and hygiene Ensure the planning and execution of a clean, well-groomed facility, without defect or damage, overseeing proper care, cleaning and stock of interiors, service and table wares, and furniture Ensure consistent communication with the front desk personnel regarding the availability of reservations for transient clientele in order to maximize revenue without sacrificing the guest experience Ensure responsible accounting practices for billing and cash-handling Communicate effectively with all management and across hotels lines.  Maintain knowledge of house counts, business levels, scheduled groups and activities.  Maintain standards of cleanliness, sanitation, and safety as required by MEMIC, OSHA, and the Maine Department of Health and Human Services By proximity, the DRM will be acutely aware of and address any staff issues, work or personal, to ensure a safe and productive work and living environment Responsible for the inventory and ordering of staff uniforms, order slips, other related materials required for the operation Protect the assets of Migis Lodge and Migis Hotel Group   Job Qualifications:   Must be able to communicate information and ideas clearly, both written and orally Must have strong social skills, able to interact with guests and employees constantly and maintain good judgment and diplomacy at all times, even in stressful situations Must enjoy working with the public, and have a strong appreciation for the guests' experience. Knowledgeable of fine, casual and banquet dining styles, proper food and beverage service, basic cooking techniques, current health codes and liquor laws. Should be well spoken, have a can do attitude, be a quick learner and with hands on accountability. Prior experience in food & beverage service is necessary; to include 3 plus years management experience as a food & beverage or restaurant manager. Must able to perform and teach all skills required of any front of house positions and willing to learn the skill set of back of house employees. Diploma or degree in business management, culinary arts or hospitality management would be a great asset. Candidate should show enthusiasm, graciousness, flexibility, adaptability, strong leadership and organization skills, the ability to work under pressure and multi-task, and the desire to learn and teach.   Working Conditions:   Physical requirements include the ability to lift and carry up to 50 lbs., walking, bending, and standing 90% of the shift.  Schedule will vary according to operational needs, but regularly includes evenings, weekends, and holidays.
